Join our hands-on cooking experience in Tokyo and learn the foundations of Japanese culinary culture through rice, dashi, and the art of tamagoyaki — led by instructors rooted in kappo tradition.
Discover the heart of Japanese cuisine in this hands-on cooking class in Tokyo, designed for curious travelers and food lovers alike. You’ll dive into the world of umami—Japan’s savory “fifth taste”—by learning how to make traditional dashi (soup stock) from scratch. Then, get hands-on as you shape your own onigiri (rice balls) with a variety of classic fillings, and cook fluffy dashimaki tamago (Japanese rolled omelet) using a traditional rectangular pan. A demonstration of miso soup and side dishes is also included to complete your washoku experience. No prior cooking experience is needed, and all instruction is in English. You’ll receive a printed recipe set and Japanese seasonings to take home, so you can recreate the flavors of Japan in your own kitchen. Perfect for pairs or small groups—come hungry and leave inspired!

11:25 - Professionals demonstrate how to make dashi (kelp dashi, bonito dashi, Combined dashi)
11:35 - Dashi tasting (experience the synergistic effects of dashi)
11:45 - Basic structure of a traditional Japanese meal ~Ichiju sansai~
11:50 - "Miso soup and side dish demonstration, followed by a hands-on experience making Dashimaki Tamago (Japanese rolled omelet)."
