〜 Learn How To Cut Sashimi From a Master of Japanese Knives 〜

Explanation:

In this class, you will explore the world of Japanese knives through hands-on experience. Learn how Japanese knives are made, how they differ from Western knives, and why Japan uses both single-edged and double-edged blades. This workshop is designed to deepen your understanding by actually using the knives yourself.

The class takes place in a professional-grade environment, using high-quality Japanese knives, wooden cutting boards, and cooking tools suitable for premium ingredients. You will watch a master’s cutting demonstration, observe a professional chef demonstrate how to make traditional Tamagoyaki (Japanese rolled omelet)(for Sushi Workshop only), practice knife techniques, learn basic knife sharpening with a whetstone, and prepare Nigiri sushi or Tuna Rice Bowl using fresh fish that you cut yourself.

Under the guidance of Master Japanese Knife expert Mr. Naoya Kumagai, you will experience authentic Japanese knife techniques while learning the philosophy and spirit behind Japanese craftsmanship. Instruction is given in Japanese and carefully translated into English.

Tuna Rice Bowl Workshop

10:45~ Registration
11:00~ Greeting ~Introduction
11:10~ Watching "The World of Japanese Knife" Special Video
11:20~ Demonstration of how to use Japanese knives by Mr. Naoya Kumagai
11:40~ Practice with all participants

1) Sashimi knife practice using flour dumplings

2) Practice cutting tuna for each person using a sashimi knife

3) Make tare (sauce) and marinate tuna

12:10~ Sharpening Japanese knives with a whetstone
12:25~ Make a bowl of tuna
12:30~ give a certificate of participation & Photo Time
12:35~Tasting time (Sake tasting is also available)

※An instructor will demonstrate how to sharpen a knife right in front of you.
If you would like to try it, please ask after your meal.
