当協会は、割烹料理の三大要素である「日本料理の本質」「割烹調理の技術」「割烹調理人の心得」を割烹道として世界に伝播し、世界に広がるカウンター越しの対面料理手法である割烹調理の普及活動やその料理人育成に関する事業を行うことで、割烹に関わる多くの人たちの幸せと健全な生活に寄与します。
私共協会は、DKBを本道場として活動しています。
Our association spreads the three major elements of Japanese cuisine, ``The Essence of Japanese Cuisine,'' ``Kappo Cooking Techniques,'' and ``Kappo Cooks' Knowledge,'' to the world as Kappo-do, and uses face-to-face cooking methods over the counter that are spreading worldwide. By carrying out activities to popularize certain types of Japanese cuisine and to develop chefs, we contribute to the happiness and healthy lives of many people involved in Japanese cuisine.
Our association operates with DKB as its main dojo.

“Kappo people” training project
The chef and the eater enjoy the meal facing each other behind the counter. We provide a learning opportunity to develop people who love counter-style Japanese cuisine (both chefs and eaters).

Certified business
We will create standards and certify the skills of kappo chefs who have the essence, techniques, and ambitions of Japanese cuisine, and create a grade system to visualize them. Furthermore, we will certify restaurants with authentic Japanese cuisine chefs.

「割烹人」として日本の誇るべき割烹文化の発展、継承のため、協会が提供する各種サービスを受けることができます。また会員限定のサービスや、会員価格での割引特典を受けることができるサービスもあります。
As a ``kappo person'', you can receive various services provided by the association in order to develop and pass on Japan's proud kappo culture. There are also member-only services and services where you can receive discount benefits at member prices.

How to become a member
割烹道に関するコンピューター試験に合格し、入会金、年会費をお支払い頂くことで、どなたでも入会することができます。
Anyone can become a member by passing the Kappodo-related computer test and paying the membership fee and annual membership fee.
